Introduction:
Windstorm (Ostwind) is a simulation/exploration game based on the popular German book and movie series Ostwind. You play as Mika, a teenager who has been sent to her grandmother's horse ranch, who soon finds out she has a kinship with the black stallion Windstorm. This is as close to Black Beauty: The Game as you're probably ever going to get – and it has a platinum trophy!
The game is currently only available in the German PSN store, or sold on disc in Germany. The game is in English (at least, the digital version is; I haven't confirmed whether the disc version is as well, though I would imagine so), so you won't have any problems if you decide to pick this one up. Make sure to search for "Ostwind" in the German PSN store, as you won't turn anything up under "Windstorm."
It is important to note that the collectibles counter can be buggy. To counteract this, ignore all collectibles (except the one you have to pick up in the tutorial, which doesn't count) until you're able to enter free-roam, then pick them all up in a single sitting. If you pick up the collectibles in multiple sittings, you run the risk of the counter resetting to an earlier count.
Walkthrough:
Step 1: Play the tutorial missions
Play through the first two missions of the game to learn the basics. Upon starting the third mission, you'll see a new option in the bottom-left corner of the screen: Go for a ride. This is the point where you can abandon the storyline and just start working on the platinum.

Step 2: Horse Racing
This step will be very quick – find the race at the hay bale field at the west end of the Kaltenbach Estate, and finish it.

Step 3: Collectibles
This is the bulk of your platinum run. There are 120 carved horse statues scattered around the map. They are fairly large and sparkle when you're near them, so this is not as difficult a task as you might think. Make sure to do this all in one sitting, as doing this during multiple playthroughs can cause the collectible counter to bug out.

While gathering collectibles, you will also unlock all of the various exploration trophies, and likely the four plant collectible trophies as well, as all of the plants will spawn near at least one of the collectible statues, and sparkle just like the statues do.

Step 4: Cleanup
By the time you've gathered all 120 horse statues, it's quite possible you will have the platinum. If not, you're either missing the four plant collectibles (head to the Pasture if so; they all seem to spawn around there), your jumps (go to the Training Grounds and run the course there), or riding distance (go to the Hills). Whatever you're missing, now's the time to farm it.
